orange glazed beets

i love beets.
and so should you.

there is something deliciously magical about these red little vegetables.
they don't have a crazy strong flavor...
maybe it's just the perfect texture?

i don't really know why, but a few nights ago i just started craving BEETS!
had to have them! :)

here's a HOW TO for beets...
super easy. super delicious.

ingredients
beets
dash of salt
1/2 tablespoon butter
1 tablespoon brown sugar
1 teaspoon cornstarch
1/4 teaspoon orange peel
1/4 cup orange juice

btw, beets completely plain are delicious as well!

directions



1. cut off beet stems and roots, leaving a little room at each end. wash.
(do not peel)


2. cook in covered boiling salted water about 30-45 minutes,
or until tender when poking with a fork
(note: this totally varies on the size of your beets.
for the size shown here, mine were tender after about 25 minutes.
for large summer beets, i cook them closer to 45 minutes)

3. drain and cool slightly. cut off ends.
at this point the skins will slip and peel right off.
so easy!




4. slice to your liking.
(i like my beets super hot or cold - so feel free to eat immediately,
or put them in the fridge to cool for a chilled beet salad!)



5. now for the glaze...
melt all ingredients over medium/high heat until thick and bubbly.
cook for about 2 more minutes.


6. drizzle over beets and enjoy!!!
confession: this hit the spot.
and was so crazy delicious i ate beets two days in a row. YUM!
