pineapple upside-down pancakes

you know how much i love breakfast.
so occasionally, instead of going out to my favorite places,
i stay in, sip my coffees, and try to create my own.

this recipe from bon appetit seriously could not be passed up.
i mean, come on. pineapple pancakes??!

i had to try them.

they were a ton of fun to make,
and pretty dang easy.

the pineapples with the browned butter and cinnamon were amazing.
but the dish was really made my the syrup. ohmyword.
it was amazing.

you gotta try these :)

ingredients

1 tablespoon unsalted butter
 1cinnamon stick, broken in half
1 large pineapple, peeled, cut into eight 1/2" rounds, cored
3/4 cup dark rum
1/4 cup (packed) dark brown sugar
1 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking soda
3/4 teaspoon kosher salt
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
nonstick vegetable oil spray

directions

1. first we need to prep the pineapple...
peel, slice and core into 1/2" rounds





i found it was easiest to just cut a little whole out of the middle with my knife


2. melt butter with cinnamon stick in a large heavy skillet over medium heat.
cook until butter begins to brown, about 2 minutes.
add pineapple slices; cook until light golden brown, 4–5 minutes per side.
transfer pineapple to a plate; let cool.





3. remove skillet from heat; add rum and brown sugar.
cook over medium-high heat until juices are thick and syrupy.


(yes, this is my syrup container)

4. now for the pancakes...preheat oven to 325 degrees.
set a wire rack on a rimmed baking sheet.

5. whisk first 4 ingredients in a large bowl.
add buttermilk and next 3 ingredients; whisk until smooth.




6. heat a griddle or large heavy skillet over medium heat. 
lightly coat with nonstick spray.
working in batches, pour batter by 1/4-cupfuls onto griddle.

(due to my small pan i only did one at a time)


7. cook each pancake until golden brown and bubbles form on top, about 2 minutes.
top each pancake with a pineapple ring.
flip; cook until pancake is golden brown, about 2 minutes.


(you want to put the pineapple ring on top while the batter is still gooey,
so the pineapple really sinks in and becomes part of the pancake)



8. place pancakes on prepared rack and bake
in oven until cooked through, about 5 minutes.


9. divide pancake among places, drizzle with syrup.... AMAZING.


(i realize at this point this looks like a regular pancake.
but let me assure you, there is a surprise waiting inside) :)
