blueberry muffins

is anyone else eating blueberries by the handful right now?
i buy at least 4 of those big cases a week.

so you want to know what inspired me to make these blueberry muffins???
this way i feel like i'm putting the berries to good use. 
instead of just strait in my mouth!

i loved this recipe from my father's daughter.

ingredients
1/2 cup unsalted butter, melted and cooled slightly
2 eggs
1/2 cup whole milk
2 cups unbleached all-purpose flour
3/4 cup plus 1 tsp sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
2 1/2 cups fresh blueberries

directions

1. preheat oven to 375 degrees.
line a 12-cup muffin pan with paper liners.

2. whisk butter, eggs and milk in a bowl.


3. combine flour, 3/4 cup sugar, baking powder and salt in another bowl.


4. stir wet ingredients into dry ingredients; fold in blueberries.


5. divide batter evenly among muffin cups; sprinkle with remaining 1 tsp sugar.



6. bake until muffins are golden brown and a knife comes out clean, 25 to 30 minutes.


7. serve warm. enjoy!! :)
