chocolate espresso snowballs

how's your december so far?
i just LOVE everything about this month.
the christmas parties, the christmas shopping,
wrapping presents, writing christmas cards,
watching the same christmas movies over and over.

i just love the JOY and CHEER of it all.
brings a huge smile to my face just thinking about it!

recipe via martha stewart

ingredients
1/2 cup flour
1/4 cup unsweetened cocoa powder
1 teaspoon instant coffee or espresso
1 teaspoon baking powder
1/8 teaspoon salt
4 tablespoons unsalted butter
2/3 cup packed brown sugar
1 large egg
4oz bittersweet or semisweet chocolate, melted & cooled
1 tablespoon milk
powdered sugar for coating

directions

1. in a medium bowl, sift together flour, cocoa, 
espresso/coffee, baking powder and salt.


2. with an electric mixer, cream butter and brown sugar until light and fluffy.
beat in egg until well combined. mix in cooled chocolate.


3. with mixer on low, gradually add flour mixture, 
beat in milk until just combined.
flatten dough into a disk, wrap in plastic 
and freeze for 45 minutes or until firm.

4. preheat oven to 350 degrees.
line 2 baking sheets with parchment paper.
shape dough into 1-2" balls.
pour powdered sugar into a medium bowl,
and roll balls in sugar two times each.
letting them sit in the sugar between coatings.





5. place on prepared baking sheets, 2 inches apart.
bake until cookies have spread and coating is cracked,
12 to 14 minutes, cookies will still be soft to the touch.
cool on a wire rack.
