cucumber crush

life feels like a constant celebration.
going from one party to another, 
planning get-togethers for anything and everything.

i've already celebrated two birthdays this week,
with two more this evening, and an amazing baby-reveal party this weekend.

i think my tombstone might say something like this if i passed:

she lived a life full of unending cupcakes, confetti, and cocktails...

i'm not complaining :)





 i had my doubts about this cocktail...
but after drinking all 4 servings of it myself (not in one sitting)
i'm convinced you should make it this weekend!

it kind of reminded me of summer... 
mojito-like flavors, it was super refreshing and delicious.
if anything, i could have made my cocktail stronger - adding more vodka.
but this recipe will make you a cocktail appropriate 
to hand to grandma at a dinner party :)







serves 4

ingredients
1 cucumber
2 tablespoons loosely packed tarragon leaves
juice of 2 large limes
3/4+ cups vodka
1/4 cup agave nectar
1 cup sparkling water
ice

directions

1. cut 8 thin slices from the cucumber and set aside for garnish.
if you have a juice, use it to juice the cucumber.
if you don't (like me), cut the cucumber in half lengthwise,
scoop out the seeds and discard, and coarsely shop the flesh.
place the cucumber pieces in a food processor or blender for about 1 minute.
pour into a fine-mesh sieve over a bowl, 
pressing the solids to release as much juice as possible.
this should yield a scant cup of cucumber juice.

2. coarsely shop the tarragon leaves a few times to release their oils.
in a small pitcher, combine the cucumber juice, tarragon, 
lime juice, vodka, and agave nectar. stir to combine.

3. to serve, fill four old fashioned glassed with ice.
divide mixture among hte glasses and top off with sparkling water.
garnish each glass with a couple of cucumber slices.

4. enjoy!!
