honey almond butter

are you excited for 2013???
i just have this feeling that it is going to be an amazing year :)

i know mine is off to a great start.
brunch with friends, a gorgeous winter day, 
a walk around lake union with a friend, an afternoon at alki.... 
yep, pretty sure it's gonna be a good one :)

i can't wipe the smile off my face!!!


this honey almond butter was AMAZING.
i might never need to buy justin's almond butter ever again!




perfect by the spoonful, on a sandwich, or with a banana :)



ingredients
2 cups raw almonds
1 teaspoon oil (almond, unrefined peanut or extra virgin coconut)
*i used almond oil*
1 1/2 teaspoons ground cinnamon
2 tablespoons honey
sea salt

directions

1. put almonds in a food processor and process for about 1 minute.
add oil, 1/4 teaspoon of salt, and cinnamon.

2. continue to process for another 8-10 minutes, 
scraping down the sides of the food processor as needed.
(for me, this was quite often)

you will see a change in consistency from crumbs, to big clumps, to a large ball. 
finally, as the oil is released from the almonds, the mixture will smooth itself out.
(this will seem to take quite a while, but it will happen. i promise!)
if you want it even smoother, add a bit more oil.

3. when it is as smooth as you'd like it, stir in the honey, add more sea salt to taste.
(it will keep covered in the fridge for up to 6 weeks)
