maple glazed salmon

how was your weekend?

mine was amazing.

no parties, no crazy plans.
plenty of time to sleep in and take my time with life.

take yesterday for example... 
i slept in
made myself brunch
walked to a coffee shop
listened to james blake
celebrated the 49er win
visited every little shop in ballard
bought fresh flowers and produce from the market
met friends in ballard
watched the sun set
read a book
went to church

are you jealous? 

pretty sure that's what sundays were created to be like :)




this dish was amazing, healthy and quick.

the maple soy glaze for the salmon was perfect.
and the mix of the pistachios, cranberries, orange zest and cauliflower was amazing.

i would eat this every day of the week.

modified by me :)

ingredients
2 tablespoons low-sodium soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh orange juice
  • 3 cloves garlic, smashed
  • 4 5-ounce skinless center-cut salmon fillets
  • (i obviously just made one) :)
  • 1 small head of cauliflower
  • kosher salt and freshly ground pepper
  • 1 tablespoon extra-virgin olive oil
  • 1/2 tablespoons dried cranberries
  • 1/2 tablespoons chopped pistachios
  • zest from 1 orange
directions


1. preheat the oven to 400 degrees

2. mix the soy sauce, maple syrup, orange juice, 2 garlic cloves 
and 2 tablespoons water in a large bowl; add the salmon and turn to coat. 
cover and refrigerate 20 minutes.

3. meanwhile, steam cauliflower on the stove until tender.

4. line a baking sheet with foil. 
drain the fish, season with salt and pepper 
and place on the prepared baking sheet. 
bake until slightly golden around the edges, 8 to 10 minutes.

5. meanwhile, heat the olive oil and remaining garlic clove 
in a large skillet over medium-high heat; cook, 
breaking up the garlic with a spoon, until softened, about 2 minutes. 
add the cauliflower, cranberries, pistachios, orange zest, 
1/4 teaspoon salt, and pepper to taste and stir to heat through. 
serve with the fish.
