savory breakfast bread pudding?

ingredients
4 cups 1/2 inch cubed french bread
2 tablespoons olive oil
coarse salt
5 large eggs
3/4 cup heavy cream
2 teaspoons fresh thyme leaves, minced
1/4 teaspoon fresh ground pepper
1/2 sharp cheddar cheese, grated
(i added one extra egg. the original recipe called for 4)
directions
1. preheat oven to 375 degrees
2. spread bread cubes onto cookie sheet.
drizzle evenly with olive oil, sprinkle generously with salt.
bake for 7-8 minutes, stirring halfway through, until lightly brown and crispy
3. meanwhile, whisk together eggs, cream, thyme, pepper and a pinch of salt.
4. stir the bread cubes into the egg mixture and let it sit at least 10 minutes

5. turn over down to 350 degrees.
6. pour mixture into buttered 9" cake pan
(can also be divided into individual ramekins)
sprinkle with cheese and bake for 20 minutes
or until cheese is bubbling and lightly browned.
7. serve warm and enjoy!!! :)
honestly, so easy and delicious.
would be great to make a couple of these for guests staying over the holiday.
might add some chopped bacon next time, instead of serving it on the side :)
