corn on the corn in the microwave?

yes. that's what's happening in my kitchen today.
i know what you're thinking. you have reached an all time low.
you can't even cook your corn on the stove, or on the grill?

well, i could.
but i wouldn't be able to test out this awesome little trick i found here:


and hello, how cute is this grandpa?

so... i had to try it out for myself...

1. place corn (husk and all) in the microwave for 4 minutes for each ear


2. remove with oven mit and place on a cutting board


3. cut off the end


4. pick up with your oven mit and let the corn slide out the bottom


5. use for anything your heart desires,
or eat it plain, like i did :)

chocolate dipped pretzels

as i mentioned here my grandma's dance moves are off the chain. 

don't believe me? take a look...


although i can't stop laughing from watching this video over and over again,
i also wanted to share with you a quick and easy way to brighten up your 4th of july festivities.

chocolate dipped pretzels with red, white & blue sprinkles.
duh!

ingredients
long thick jumbo pretzels
high quality chocolate chips
(i used ghirardelli)
sprinkles
wax paper


directions

1. heat about 1 cup chocolate in a microwave safe bowl
stirring every 30 seconds until melted completely through.
(amount of chocolate you'll need depends on how many treats you're making)

2. dip pretzels into chocolate, using a spoon to spread the chocolate
as far up the pretzel as you want. i made mine half-dipped.


3. let cool just slightly before sprinkling with holiday appropriate sprinkles.
do this over a large bowl to catch extras :)



4. lay the pretzels gently on wax paper to cool.
if you want them to cool faster, pop them in the freezer for a few minutes.


5. enjoy!!! :)

blueberry pavlova

i'm a die-hard beyonce fan.
i'm not sure if i've shared that with you yet...

if you think i stayed up late last night watching every single video
from her recent concert comeback in atlantic city - you are right.



something else i love a lot?
this new dessert recipe from my father's daughter

ingredients
4 organic large egg whites
pinch fine salt
1/2 teaspoon white vinegar
3/4 cup plus 2 tablespoons sugar
1 tablespoon cornstarch
1/2 teaspoon vanilla extract
1 cup heavy cream
11/2 cups fresh blueberries, plus more for serving

directions

1. preheat the oven to 350 degrees

2. combine egg whites, salt, and white vinegar together in a large bowl
beat on high speed until soft peaks form.

tip: for the best meringue possible,
allow your eggs to sit out for 30 minutes prior to mixing them

3. combine the 3/4 cup sugar and cornstarch together in a small bowl
and add to the egg whites in thirds, whisking each addition in completely.
add the vanilla and beat until stiff peaks form.

4. line a baking sheet with parchment paper and spoon the meringue in 8 big spoonfuls,
using a spoon to spread them in a circle, and then make an indent in each.
bake for 10 minutes, lower the heat to 200 degrees, and bake for another hour.
turn off the heat and cool the meringues in the oven for an hour,
propping the door open with a wooden spoon.

tip: allow enough room for them to expand (see pic below)


5. meanwhile, whip the cream together with the remaining 2 tablespoons of sugar.
in a small bowl, crush 1/2 cup of the blueberries with a potato masher to release their juices.
fold those and the rest of the blueberries into the cream if you like,
or use as a topping over the egg whites and cream.


6. evenly distribute the cream on the meringues, filling in the indentations.
top with juicy blueberries and serve.
(i also topped mine with vanilla bean ice cream)


i loved this little dessert!
so fun and easy and slightly out of the ordinary!

chocolate chocolate cookies


this weekend was a lot of fun.

it included but was not limited to the following...

1. dinner at brouwers with my parents
2. helping my future sis-in-law with wedding invitations
3. trying to make ham & cheese waffles
(more about that later)
4. double date, take out thai food, and a bad movie
5. a spring walk through UW
6. being #1 in my office march madness tournament
7. almost finishing season 1 of friday night lights
(slightly obsessed)
8. good times with dear friends
9. a secret adventure

and....... drumroll please.............

10. making these cookies with my mother

this recipe was found here and was adapted from epicurious.

ingredients
nonstick cooking spray
1 1/2 cups bittersweet chocolate chips
3 large egg whites, room temperature
2 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/4 teaspoon salt
(yes - these cookies don't have ANY flour or butter. crazy, huh?)

directions
1. preheat oven to 350 degrees
spray 2 large baking sheets with nonstick spray

2. melt 1 cup chocolate chips in glass bowl in microwave,
stirring about every minute. cool slightly.


3. using electric mixer, beat whites in large bowl to soft peaks


4. gradually beat in 1 cup sugar

5. continue beating until mixture resembles soft marshmallow creme

6. whisk 1 cup sugar, cocoa, cornstarch, and salt in medium bowl to blend



7. on low speed beat dry ingredients into meringue

8. stir in lukewarm chocolate and 1/2 cup chocolate ships
(dough should become stiff)



TIP: wait for your chocolate to be lukewarm.
mixing it in too quickly makes the cookie hard to work with in step 9

9. place 1/2 cup powdered sugar in bowl.
roll dough into 1.5" balls, roll in sugar, coating thickly.


10. place on baking sheet 2" apart

11. bake until puffed and tops looked cracked ~ about 10 minutes
cool on rack for 10 minutes

(makes about 18)


we ate these cookies right away - while still gooey.
we couldn't resist!

once cooled however, they turned into more of a brownie texture.
very dense and rich and chewy. delicious!

not your classic cookie by any means.

superbowl commercials!

i'm in marketing. so one of my favorite things about the superbowl are the ads.
in another life i've also dreamt about creating superbowl ads for a living...

i'm the girl that goes to the bathroom during the play,
so i can be back in my seat in the time to see the commercials. (obvi!)

here are my two faves from recent years.
