game day appetizers

who's excited for the superbowl???
me too :)

now let me make this clear...
while i'm actually a huge football fan,
unless my fave teams (seahwaks, 49ers, saints, broncos)
are playing, i don't really care.

i do, however, love any excuse to party with friends :)
therefore, i'm starting to plan for game day appetizers (duh!)

hummus and spinach, artichoke, white bean dip
strait from christine's test kitchen!

(thank you all recipes & cooking light)

these recipes were amazingly easy, delicious AND healthy!
tastes like a WIN to me :)

hummus

ingredients

2 cups canned garbanzo beans, drained
1/3 cup tahini (found mine at whole foods)
1/4 cup lemon juice
1 teaspoon salt
2 cloves garlic, halved
1 tablespoon olive oil
1 pinch paprika
1 teaspoon minced fresh parsley

directions

 1. place the garbanzo beans, tahini, lemon juice,
salt and garlic in a blender or food processor.
blend until smooth. transfer mixture to a serving bowl.

2. drizzle olive oil over the garbanzo bean mixture.
sprinkle with paprika and parsley.


spinach, artichoke, white bean dip

ingredients 
1/4 cup grated fresh pecorino romano cheese
1/4 cup canola mayonnaise
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground red pepper
2 garlic cloves
1 (15-ounce) can organic white beans, rinsed and drained
1 (14-ounce) can baby artichoke hearts, drained and quartered
1 (9-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
cooking spray
1/2 cup shredded part-skim mozzarella cheese


directions

1. preheat oven to 350 degrees

2. place Romano cheese, 1/4 cup mayonnaise, 1 teaspoon lemon juice, salt, black pepper, red pepper, minced garlic, and white beans in a food processor, and process until smooth.

3. spoon mixture into a medium bowl.
stir in the artichokes and spinach.


4. spoon the mixture into a glass or ceramic baking dish coated with cooking spray.
sprinkle with 1/2 cup mozzarella.

bake at 350° for 20 minutes or until bubbly and brown.


5. i enjoyed both with my favorite chips.

(tip: if you're dipping with a pretty salty chip, consider reducing the salt in the dish.)
