butternut squash veggie bake

i'm still mourning the 49ers loss from yesterday, 
BUT in the meantime, to cheer myself up,
i keep watching beyonce's halftime show over and over.

AMAZING!!!!!!!!! love her!

 this recipe was almost too easy.
i made it in the microwave. such a cop-out, i know.
but super healthy and delicious. 
might make this again this week!

recipe via food network


1 14 oz can diced tomatoes
2 slices garlic cloves
2 sprigs thyme
2 tablespoons olive oil
pinch of red pepper flakes
2 cups cubed peeled butternut squash
1 bunch chopped swiss chard (stems removed)
pecorino or parmesan cheese


1. combine tomatoes, garlic, thyme, oilive oil and red pepper flakes 
in a large microwave safe bowl. add butternut squash.
cover with plastic wrap and peice the plastic, 
microwave until squash is tender - about 15 minutes.

2. add swiss chard and toss.
cover and microwave 5 more minutes.
top with cheese.
