chickpea, avocado, feta salad

easy salads are totally my jam.
avocados are also my jam.

ben makes fun of me because i have a lot of favorites,
but why not have a lot of favorites?
i have a new favorite thing almost every week.
i mean sometimes they last for a while, and sometimes they fade away.

recent favorite things:
easy salads (see above)
avocados (see above)
marco polo beechers cheese
marcona almonds
gin and tonics
graham crackers
damages (the tv show)

this salad is seriously so simple.
you might even have every single ingredient in your pantry as i type this.
ready in 5 minutes. HELLO!

modifications by me

makes 2 large salads or 4 small salads

ingredients
1 can chickpeas, rinsed and drained
2 avocados, pitted and chopped
always lean towards an avocado that is still a tad firm to the touch if
you're going to mix it into a salad. don't use one that's too soft! just trust me!
1/3 cup chopped basil
2 tablespoons chopped green onion
1/3 cup feta
juice of 2 limes
salt and pepper

directions

1. in a medium bowl, combine all ingredients except the avocado. mix until combined.

2. add avocado and mix gently.

3. serve chilled or at room temp.  try not to eat the whole bowl.
