along with the homemade guac i made this week,
i also enjoyed a new chunky salsa recipe.
i loved all the ingredients and flavors :)
1 (11 ounce) can whole kernel corn, drained
1 (4 ounce) can sliced black olives, drained
1 1/2 cups diced roma tomatoes
3/4 cup diced red onion
1 red bell pepper, seeded and diced
1 1/2 teaspoons minced jalapeno pepper
1 avocados - peeled, pitted and diced
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 teaspoon salt
(recipe via all recipes)
1. gently stir together all ingredients.
2. salt, pepper, and lime to taste! :)
i really enjoyed this!
next time, i think i will double the corn and half the olives.
then it will be perf! :)
