i'm traveling for business this week
which gives me a chance to actually catch up on blog posts
while not cooking or baking anything new. (yay!)
i'm a big fan of quick desserts.
why? after you cook an entire meal,
sometimes you just want a quick sweet treat
this was miniature perfection
AND super easy.
ingredients
1/2 cup sugar
1 large egg
2 cups 1% low-fat milk
1/3 cup unsweetened cocoa
1 tablespoon cornstarch
1 tablespoon instant espresso granules
1/8 teaspoon salt
1 ounce bittersweet chocolate
1 teaspoon unsalted butter
1 teaspoon vanilla extract

directions
1. combine sugar and egg in a medium bowl; stir with a whisk.
2. add milk and next 4 ingredients (through salt); stir to combine.
3. transfer milk mixture to a medium saucepan;
cook over medium heat 14 minutes or until thick and bubbly, stirring constantly.
4. remove from heat; stir in chocolate, butter, and vanilla.
(you can see that i poured mine into mini custard dishes)
cool 10 minutes before serving.
(pretty sure everything is better in a personal size)
we shared one of these after 10 minutes, while it was still warm
and saved the others for later. i actually liked them better COLD!

caveat: i don't LOVE chocolate
(i realize some of you might think that's a crime)
for me, these were just so-so
BUT, friends LOVED this.
so, there you have it. you'll have to be the judge :)
