strawberry shortcake

something about strawberry shortcake has always reminded me of my childhood.
i'm not sure i ever even ate this as a child, it's just the smell and the flavors...

it brings me back to those easy breezy days in southern california.
not a care in the world.
no responsibilities.
tangly bright blond hair.
sand in between my toes.

those were the days...

i still remember building mud pies in the back yard) :)

ingredients
1.5 cups flour
1/4 sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/3 cup cold butter
1 egg, slightly beaten
1/2 cup sour cream
2 tablespoons milk
5 cups sliced strawberries
3 tablespoons sugar
1.5 cups heavy whipping cream

overall this was a great recipe.
i think i would have actually made individual cakes next time.
so much easier for serving, etc!

directions

1. preheat oven to 400 degrees
lightly grease a baking sheet; set aside.

2. in a medium bowl combine flour, the 1/4 cup sugar, the baking powder, salt, and baking soda
using a pastry blender, cut in butter until mixture resembles coarse crumbs.

3. in a small bowl combine egg, sour cream, and milk.
add to flour mixture, stirring with a fork just until moistened.

4. for individual shortcakes...
drop dough into 8 mounds onto prepared baking sheet.
bake for 12 to 15 minutes or until golden. transfer to a wire rack and let cool.

OR...
transfer all of the dough to a greased 8x1-1/2-inch round baking pan, spreading evenly.
bake for 18 to 20 minutes or until a wooden toothpick inserted near the center comes out clean.
cool in pan for 10 minutes. remove from pan and cool completely.


5. meanwhile, combine 4 cups of the strawberries and the 3 tablespoons sugar.
whip up your whipping cream.


6. for the cake version...
cut cake in half. spoon half of whipped cream and strawberries over bottom layer.
replace top of cake. top with remained whip cream and berries. slice and serve.

for individual ones... just serve with whip and berries!
