i love beets!
i pretty much order them every restaurant we go to.
so naturally, i decided to make a similar version at home.
1 bunch of beets
low fat cottage cheese
2 cups arugula
salt & pepper
1. trim roots and leaves from beets.
place in a large pot and cover with water.
bring to a boil and cook until tender when pierced with a fork
(about 30-45 minutes)
(two bunches of beets shown here)
2. let beets cool, slip off the skin, then slice.
3. place a handful of arugula on each place.
top with a drizzle of olive oil and balsamic vinegar
arrange beet slices, top with 1/4 cup cottage cheese, and a handful of pistachios.
flavor with salt and pepper to your liking.
4. super delicious if you ask me.
