orange pecan sweet bread

this past weekend, some of our favorite friends to double date with
treated us to a show at the ACT theatre called 'first date'.

i wasn't quite sure what to expect,
but decided that i've never laughed so hard in my entire life,
especially at a theatre performance!

it's a one act show that follows a blind date start to finish.
showing all the quirky things that happen and all the internal dialogues along the way.

it was amazingly sharp, funny, and modern.
(think references to facebook, twitter, etc.)
i would recommend it for anyone who loves outrageous, over-the-top humor,
isn't super conservative, and is age 19-35ish :)

i also loved this healthy sweet bread :)

recipe from cooking light, adapted by eat yourself skinny

bread ingredients
1 3/4 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. cinnamon
1/4 tsp. allspice
1/2 cup sugar
3/4 cup fat-free milk
1 Tbsp lemon juice
1/4 cup chopped pecans, toasted
3 Tbsp vegetable oil
3 Tbsp fresh orange juice
2 tsp. grated orange rind
2 large eggs
cooking spray

glaze ingredients
1/2 cup powdered sugar
2 tsp. fresh orange juice
1 1/2 tsp. chopped pecans, toasted

1. preheat oven to 350 degrees

2. in a large bowl, combine flour, baking powder,
baking soda, salt and spices, stirring well with a whisk.
make a well in the center of the mixture and set aside.

(new favorite thing: fresh grated nutmeg. YUM!)

3. now in a medium bowl using a whisk, combine the sugar,
milk, lemon juice, pecans, oil, orange juice, zest and eggs.

(toast all your pecans at once)

4. add to your flour mixture and stir with a spoon just until moist.

5. pour your batter into an 8 x 4-inch loaf pan coated with cooking spray.
bake your bread at 350 degrees for about 45 to 48 minutes,
until a toothpick inserted comes out clean.
cool for about 10 minutes and remove bread and place on wire rack.
allow to cool completely.

6. for the glaze, combine the powdered sugar and orange juice, whisking until smooth.
drizzle glaze over your bread and sprinkle with pecans.

7. enjoy!! :)
