amazing homemade granola

this past weekend i traveled to colorado.
i had a blast.
one of the highlights was buying a new cookbook.
i hope you're excited. i'll probably be cooking from it non-stop for the next 3 weeks :)
2 cups whole rolled oats (not instant or steel-cut)
½ cup raw, whole almonds
¼ cup pumpkin seeds
¼ cup sunflower seeds
½ tsp garam masala
**i found mine at whole foods. at first i wasn't sure about adding this ingredient,
but am SO GLAD I DID! the flavor was super subtle but amazing. do it.
¼ tsp ground cinnamon
¼ tsp fine salt
½ cup maple syrup
3 tbsp light agave or brown rice syrup
2 tbsp vegetable oil
½ cup dried cranberries, roughly chopped

1. p
reheat oven to 350F
2. stir together oats, nuts, seeds, spices and salt in a large bowl.

3. combine the maple syrup, agave, and oil in a small bowl and then mix with dry ingredients.

4. spread the granola out on a non-stick sheet pan

or a regular sheet pan
covered with parchment paper and coated with a little vegetable oil.

5. bake for 15-20 minutes, stirring occasionally, or until evenly browned.
combine cooled granola with cranberries.

(store in airtight container)
