you guys. i ate this entire salad yesterday. yes, all of it.
the recipe said kid friendly, but i don't know how many kids love red onion...
i thought this salad was fantastic.
super easy and even better after it chilled for like 30 minutes.
recipe via cooking light
ingredients
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon pepper
2 cups thinly sliced Honey Crisp apple
(i used whatever apples i had on hand - usually braeburn)
2 cups sliced celery
1/2 cup loosely packed fresh flat-leaf parsley
(i used MINT instead, since i don't love parsley)
1/3 cup sliced red onion
directions
1. combine first 4 ingredients.
2. add apple and remaining ingredients; toss.
3. enjoy!
