broiled pineapple sundaes

i have a sister named kinsey.

today she is moving to alaska for the summer.
i'm jealous :)

i have a lot of favorite things about her,
but one of the funniest is her intense love for pineapples.

this delectable treat is in honor of her sendoff.

trust me, it's delicious. 

ingredients
3 tablespoons brown sugar
3 tablespoons fresh orange juice
1 1/2 teaspoons honey
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 cups coarsely chopped fresh pineapple
1/4 cup macadamia nuts, coarsely chopped
2 cups vanilla fat-free frozen yogurt

directions

1. preheat broiler on high

2. combine first 5 ingredients in a medium bowl, stirring well with a whisk.
add pineapple; toss to coat.

3. spread pineapple mixture in a single layer on a pan lined with foil.
broil 5 minutes or until bubbly.


4. place nuts in a skillet; cook over medium heat 3 minutes
or until lightly browned, shaking pan frequently.


5. spoon 1/2 cup yogurt into each of 4 dessert bowls.
top each serving with about 1/4 cup pineapple mixture and 1 tablespoon nuts.


feel free to serve with anything from vanilla bean ice cream to fro-yo!
