i don't know where my mind was yesterday.
you know that feeling where you drive all the way across town
but don't really remember how you got there?
so, i made this recipe last night...
but looking at it again now i realize
i didn't follow the instructions at all. LOL
i only used 1 can of garbanzo beans and cooked them
for 40 less minutes than i was supposed to. oopsies.
the funniest part? i thought they were great!
i'm sure yours will be even better ;)
recipe via cooking light
ingredients
2 (15 1/2-ounce) cans garbanzo beans rinsed and drained
2 tablespoons canola oil
1 teaspoon ground cumin
3/4 teaspoon kosher salt
1/4 teaspoon ground red pepper
1/8 teaspoon onion powder
1 garlic clove, minced
directions
1. preheat oven to 300 degrees
2. gently remove skins from each bean.
(some people like to do this by gently rolling the beans between two paper towels.
i prefer to just do it by hand. be patient. it will only take about 5 minutes total.)
discard skins.
3. combine chickpeas and remaining ingredients.
arrange on a baking sheet.
bake for 1 hour and 40 minutes, stirring every 20 minutes.
